Recipe : Alloco

Alloco is a beloved Ivorian dish that serves as a delightful snack or side dish. This recipe is tailored to serve four people and is simple to prepare with readily available ingredients.

Instructions

  1. Start by peeling the plantains. Cut them into quarters lengthwise, then slice each plantain quarter into cubes. Peel the half onion and thinly slice it into rounds.
  2. Heat the peanut oil in a deep fryer (or in a thick-bottomed pot). When the oil is hot enough, fry the onion slices in the oil until they start to lightly darken. Once they are nicely colored, add the plantain cubes into the peanut oil and fry them until they turn golden brown as well.
  3. Towards the end of cooking, the plantain cubes should be nicely colored. Remove them from the fryer and place them on a plate lined with paper towels. Let the alloco (fried plantains) and the fried onions drain for 5 minutes.
  4. Sprinkle a bit of salt over the alloco and fried onion rounds. Mix them gently. Serve your alloco immediately, either as an appetizer or as a main course, and enjoy them while they are hot.
