Recipe : Galette comtoise

Preparation

  1. In a saucepan, pour the milk, butter, and sugar.
  2. Bring the mixture to a boil until the butter is completely melted.
  3. Add the flour all at once and vigorously whisk off the heat.
  4. The choux pastry dough forms as you quickly stir the mixture.
  5. While stirring with a spatula, return the mixture to the heat for 2 minutes.
  6. Continuously mix to prevent the dough from sticking.
  7. Remove from heat, add the orange blossom water, and then add the eggs one by one while mixing in between each egg.
  8. Pour the choux pastry into a previously buttered round cake pan lined with parchment paper.
  9. In a small bowl, mix an egg yolk with a pinch of salt, whisk with a fork.
  10. Dip the fork in the egg and make stripes on the cake.
  11. Using a brush, glaze the choux pastry with the remaining egg yolk.
  12. Bake at 180°C (356°F) for 30 minutes.
  13. Allow to cool before unmolding.
  14. Flip the galette onto a rack to unmold, then onto a plate for serving.
