Recipe: Quebec Maple Syrup Pie

How to bake maple syrup pie?

1- Make the pastry: In a food processor combine the flour, sugar and salt. Add the butter and pulse for a few seconds at a time, until the butter is the size of peas. Add the egg and water. Process again until the dough just begins to form. Add a bit more water if needed. Remove the dough from the food processor and form a disc with your hands.

2- On a lightly floured work surface, roll out the dough and line a 23-cm (9-inch) pie plate. Refrigerate for 30 minutes.

3-With the rack in the middle position, preheat the oven to 425 °F (220 °C). Cover the pastry crust with aluminum foil and fill with dried beans or pie weights. Bake for 8-10 minutes or until the crust looks dry. Remove the foil and beans and bake for about 8-10 minutes or until the crust is cooked and golden brown. Allow to cool.

4- Make the filling: In a saucepan off the heat, dissolve the cornstarch in the water. Add the maple syrup, sugar, cream and egg. Whisk to combine. Bring to a gentle boil, stirring constantly with a whisk. Simmer for about one minute, then remove from heat.

5- Add the butter and stir until melted. Pour into the pie shell. Let it cool for a bit and refrigerate for about 3 hours or until the filling is firm. Optional: You can add a little powdered sugar on top of the pie before serving.
