Recipe : French Crepes

The French crepe is not only an emblematic culinary preparation from Brittany, it is also certainly one of the easiest French meals to prepare. Whether with brown sugar, chocolate, cheese or served with a salad, this fine milk-based preparation delights young and not-so-young all year round.

How to do French crepes ?

 1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.

 2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Tips:
-Don't forget to let the pan heat up for at least 1 minute before pouring the batter !
-For sweet crepes, you can of course add sugar, apple juice, or lemon zest for more flavor.
-To obtain an even lighter paste, you can replace the butter by a vegetable oil in the same quantity. Make sure to choose an oil with a neutral taste, like sunflower oil.

The term crêpe, in both English and French, can trace its roots back to old french “crespe,” meaning crispy or wavy and derive from the Latin “crispa,” meaning “curly.” True to its name, crepes have crispy edges that sometimes curl up with a crepey textured surface.
