Verrines of smoked salmon and ricotta Recipe
(For 4 people)
- 2 slices of smoked salmon
- 3 tablespoons of ricotta cheese
- 2 tablespoons of fresh cream
- 1 lemon
- 5 sprigs of dill
- Sprigs of chives

How to make the verrines ?
1- Cut the smoked salmon into strips and then into small rectangles. Chop the chives and dill.
2- Mix the lemon juice, ricotta cheese, fresh cream and herbs in a bowl. If you wish, add a little pepper. Add the smoked salmon, keeping some for decoration. Mix well.
3- Using a piping bag with a large tip, fill the cocktail glasses with the preparation. This is what makes the verrine so elegant. Finish with two rectangles of smoked salmon and a dill plume. Serve.
